Make table with an ambient temperature ranging 50 (top)-67*F (bottom). Refrigerators should be held at a temperature of 41*F to hold temperature-controlled foods. Employee mentioned they put in a service request and will be serviced today. Establishment to provide work order invoice once completed. Re-Inspection to occur by 8/4/2023. No temperature controlled foods to be held in unit until unit can hold an ambient temperature of 41*F or below. All foods to be held on ice or in walk-in at 41*F. Prior to inspection, person in charge removed all foods (pepperoni, wings, sausage, cheeses, pineapple, olives, etc.) in bottom compartment within 2 hours of temperature change above 41*F and placed in walk-in cooler for cooling. Food temperatures were ranging between 45-47*F. All items (pepperoni, wings, sausage, cheeses, pineapple, olives, etc.) in top compartment were held on ice, and times and temperatures were documented. Foods to continue to be discarded every 6 hours if maintaining a temperature of 70*F or below. If foods are above 70*F, foods are to be discarded every 4 hours.
