PRIORITY VIOLATION-5-402.13, P: Conveying Sewage >>> Observed the wash and rinse basins of the 3-compartment sink to have a directly plumbed waste line, which was documented during the OC/routine inspection. Improper disposal of waste provides a potential for contamination of food, utensils, and equipment and, therefore, may cause serious illness or disease outbreaks. Re-route the 3 compartment sink drain lines so all three go to the floor sink. Cap the old sewer connection. Re-inspection for the correction 3 days. Correct By: Correct Prior To Reinspection

Also observed the metal cove base on the exterior of the walk-in cooler to be separated from the wall. Discussed sealing any gaps/voids or foam/rough surfaces to a smooth, easily cleanable and non-absorbent finish. Voids and gaps create a space for water pooling, pest harborage and pathogen growth.
