Corrective Action: Corrected at time of inspection. Meat, cheese, egg wraps, portioned butter and portioned cream cheese at 45*F internally in bakery display cooler for more than two hours, per employee. Unit read 45*F on min/max and unit thermometer. Manager determined unit was set too high and turned it down. The unit reached 40*F on the min/max. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

The establishment can stock and train.Discussed with the manager, Jason regarding food service conducted in the meeting room. A food catering permit will be added for this purpose.Please provide schematic for the water connection of the aquarium. Provide a reduced pressure zone assembly at the water connection point of the RO system for the aquarium.Please address the following items prior to the inspection:1. Provide 140*F for the incoming water of the high-temp dishwasher. Cold water fed dishwasher is approved with contingencies. The establishment must provide monitoring log twice a day and maintain log for one year. Inspector will verify once a month before final approval can occurs. Hot water source must be provided at the site in case the high temp dishwasher does not operate properly. 2. Noted there are drainpipes running over dry storage, small ware storage. Please provide troughs or wrap the drainpipes with insulation.3. Provide a water stub-out with angle stop at all mop sinks for chemical dispenser connections.4. Caulk and seal all gaps, cracks and penetrations throughout the facility.5. Provide door sweeps and weather stripping at all exterior doors.6.
