Observed the following Time/temperature Control for Safety (TCS) foods in the walk in: raw beef 50-53*F, chicken nuggets 49*F, raw chicken 48-52*F, cooked noodles 51*F, milk 49*F, tofu 53*F, cooked shrimp 51*F, raw salmon 47-49*F, potstickers 50*F, cut lettuce 50*F, crab mix 54*F, cream cheese 53*F. Per Person In Charge (PIC) when they arrived onsite this morning (7:30AM) walk in was holding above 50*F, they called for repair, refrigeration repair was just completed prior to start of inspection. Walk in ambient temperature dropped to 41*F during inspection. PIC removed to voluntarily discard TCS items improperly cold held in walk in. See embargo. Corrective Action: Corrected at time of inspection.
