Deli sliced meats and cheeses found with internal temperatures of 50-55*F in prep cooler on cook-line. PIC stated the items were placed in the cooler about 2 hours ago and moved them to the freezer for rapid cooling and continued cold holding. Reach-in cooler near fryers found with hot dogs and cooked diced chicken with internal temperatures of 45-47*F. PIC discarded the hot dogs and chicken. Both coolers will not be used for cold holding of TCS food items until they are repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternative coolers are available to continue normal operations. Also discussed monitoring of walk-in cooler. Temperatures verified with PIC's and inspector's calibrated probe thermometers.

Raw hamburgers, ravioli, hot dogs, and couscous in prep top cooler upper and lower portions found with internal temperatures of 43-50*F. Ambient temperature of the cooler was 45-48*F. PIC stated the food items were placed in the cooler around 6:00 AM today and discarded them. The cooler's temperature was last checked before 6:00 AM. The cooler was later found to be providing an ambient temperature of 41*F or below. The cooler may have been left open which caused the ambient temperature and food items to rise in temperature. The cooler will be monitored to ensure it is holding an ambient temperature of 41*F or below before being used for cold holding TCS food items.
