Inspector's notes

-- High temperature dishwasher observed with dishes inside unit and a final ambient temperature of 145.9°F using min/max thermometer. The dishwasher was ran multiple times and it consistently measured under the required 160°F final temperature. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. At the time of inspection, the dishes were removed from the dishwasher, the person in charge (PIC) stated a work order will be placed, and the PIC stated dishes will be washed, rinsed, and sanitized in main kitchen mechanical dishwasher until bistro dishwasher is repaired. Requested PIC place and "out of order/do not use" sign on unit. Ensure employees are using dishwasher safe thermometer to verify dishes are getting properly cleaned/sanitized to 160°F. Corrective Action: Corrected at time of inspection.
