Inspector's notes
PIC brought their prep equipment and utensils from personal storage to kitchen to prepare beverages on site. Upon arrival, PIC placed dishes in wash basin of 3-compartment sink and cleaned them with soap. PIC rinsed items but did not sanitize them in an approved solution before attempting to use the items. PIC was stopped and asked to sanitize items in sanitizing solution a time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Food-contact surfaces were properly sanitized at time of inspection. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Corrective Action: Corrected at time of inspection.

Talked to Alex Sigala over the phone and indicated that he is currently not operating the facility since he is out of town. The operator indicated he would be contacting us on 12/26/2023 to conduct at inspection at the facility.
