Reviewed cleaning frequency with person in charge and discussed importance of regularly cleaning the guard to prevent material from collecting and falling into ice. Observed food debris on the tomato dicer that was stored as clean below the prep counter. Spoke with PIC and they placed the dicer in the dish area to be washed. Discussed when cleaning the slicer to unscrew the top handle portion to clean between the black plastic and the metal handle. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Inspector's notes

Measured internal temperature of ham, raw chicken, sausage patties in cold drawers below flat top at 66°F. Food was placed in unit 3 hour prior. Manager stated circuit breaker was tripped, causing refrigerator to shut off. Breaker was reset and refrigerator was operating properly at end of inspection. Corrected at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection.
