-- In cream dispenser, observed light cream with an internal temperature of 56°F using probing thermometer. The person in charge was unsure how long the cream had been in the dispenser. At the time of inspection, the cream was voluntarily discarded by the person in charge (PIC). The PIC stated they will use alternate dispenser to hold creamers and they will place a work order to repair equipment. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
