In the Bistro handwashing sink and dump sink, the stoppers on the pull-down faucets must be adjusted so that the nozzles stay at least 1” above the top of the sink. According to cook, a work order was placed a week prior to the inspection to repair or replace the leaking faucet at the cook-line handwashing sink and to service the walk-in freezer (all food observed to be frozen solid during the inspection).

Inspector's notes

Observed dried food debris on the blade of the deli slicer and dried dairy product on the dispenser nozzles of the shake machine. Cook placed the slicer in the ware washing area and the server will clean and sanitize the shake machine nozzles. While in-use, the nozzles must be cleaned every 4 hours. Equipment food contact surfaces and utensils shall be clean to sight and touch. Discussed the hazards of TCS foods left on equipment that is stored at room temperature. Many foodborne illness pathogens grow rapidly in the danger zone (41-135F). TCS food debris remaining on clean equipment is a potential source of contamination for foods that come into contact with the equipment. Corrective Action: Corrected at time of inspection.
