#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cold holding unit on top of counter along sushi prep line holding TCS items above 41*F. Person in charge stated items were in temp when placed in unit 2-3 hours prior to inspection. TCS items include cream cheese (46*F-48*F), spam (50*F), crab meat (48*F), and butter (49*F).Unit had ambient temperature of 33-41*F, measured with min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

TPHC for 6 hours may be used if the temperature of a cold item is monitored and will not rise above 70F.

Chlorine sanitizer solution concentration at in-use mechanical dishwasher was measured at 0ppm. Chlorine sanitizer solutions for food contact surfaces should be maintained at 50-100ppm. Person in charge (PIC) moved all recently-washed dishes and containers to 3-compartment sink and directed staff to wash dishes manually until proper sanitizer concentration is established. Corrective Action: Corrected at time of inspection.
