Inspector's notes

Observed shredded cheese, pepper jack cheese, liquid eggs and chorizo in reach-in cooler with an internal temperature of 46-47*F. PIC moved TCS foods to reach-in cooler to rapidly chill. Cheddar cheese had an internal temperature of 50*f and was discarded at time of inspection. Also observed butter with an internal temperature of 70*F at time of inspection. According to PIC, time as a control is used but could not provide documentation or policy. Butter had been left out for more than 4 hours and was discarded at time. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed reach-in cooler with an ambient air temperature of 46-47*F. All TCS foods were either moved to upright reach-in cooler or kept on ice to rapidly chill. Technician was called for repairs. Will re-inspect on 8.25.26. Corrective Action: Correct prior to re-inspection. 3-501.15 (A) - Priority Foundation: Cooling Methods.
