Inspector's notes

Observed the following TCS food items: tomato sauce (49'F), red salsa (48'F), and sour cream (48'F) stored in a single-door floor refrigerator at time of inspection. Per PIC, the items were placed inside of the unit 1 day prior to inspection during grocery delivery. Discussed cold-holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed single-door floor refrigerator with an ambient internal temperature reading of 55.5'F at time of inspection. PIC was unsure of when the unit stopped functioning. PIC discarded TCS food items (See Violation #22) and relocated all remaining items to alternative refrigeration. PIC will discontinue use of the unit until repairs are made. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to next routine inspection.

Observed plumbing at 3-compartment sink unable to contain drainage in piping, causing an excessive leak at threading of pipe. Person in charge unable to utilize rinse compartment of sink. Mechanical ware washing unit unable to properly sanitize. Person in charge to call maintenance and have fixed prior to re-inspection on 3/24/2025. All dishes washed and rinsed in wash compartment and manual sanitized in last compartment.
