The person in charge stated the food items had been placed for cold holding less than 4 hours ago and relocated them to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed other TCS food items with internal temperatures between 47-58F in a prep cooler, a reach in cooler, and the walk in cooler. The person in charge stated these food items had been stored since the previous day, more than 4 hours. TCS food items in the prep cooler included raw marinated shrimp ceviche, TCS food items in the reach in cooler included cooked pasta, TCS food items in the walk in included cooked chicken wings, cooked beans, cooked salsas, raw bacon, cheese, dairy whipping creams, sour cream, oysters, and cream cheese.
