In the single door reach in cooler, observed 3 containers of cooked beef with internal temperature of 44-48 degrees F. Person in charge (PIC) stated items had been in unit since day prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

At time of inspection, walk in cooler was out of service with ambient temperature of 52 degrees F. PIC stated a work order was placed for unit. No TCS items are being kept in the walk in. All TCS items have been previously moved to alternate refrigeration. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection on 08/27/2026

Corrective Action: Corrected at time of inspection. Carne asada piled high above the rim on the pan in the top of the cold table at 57*F internally. PIC stated it had been held as such about an hour and moved it to the walk-in to re-cool. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Do not over-fill the cold table pans. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
