observed in the meat case west side, pans of sliced steak, after 49-50.6 deg f . showed manager. manager checked with meat food prep. staff. meat sliced this afternoon at 1pm. suggested to placed newly sliced meats in the walk-in cooler first, then as needed, trays of meat be placed in the front display case. manager relocated all meat extra trays to walk-in cooler. 41 deg f established during the inspection. manager coached staff not to overfill meat case. and place excess food in the designated walk-in cooler till needed. Corrective Action: Corrected at time of inspection.

Per PIC, an employee probably got confused and stored them on a top shelf by mistake. PIC placed raw eggs to a lower shelf at time of inspection. Corrective Action: Corrected at time of inspection.
