Observed hot hold beef near steam table across from grill at 118*F. Hot hold of food to be 135*F or greater after being cooked to the correct temperature (whole muscle beef to be cooked to 145*F, other beef 155*F) Beef was reheated to 165*F and returned to be hot held. Corrective Action: Corrected at time of inspection. Advised staff to monitor hot hold foods using their metal stem thermometer. Provided documentation about using Time as Control for holding of food.

No sanitizer observed on wiping cloths in red sanitizer bucket near front steam table. When using sanitizer for wiping cloths, chlorine based sanitizer (bleach) to be 100 ppm. If using quat ammonia based sanitizer follow manufacturer recommendations (140 - 400 ppm). Sanitizer was remixed for bucket. Corrective Action: Corrected at time of inspection.
