Inspector's notes

Observed diced tomatoes at pizza prep line at 47-50*F. Cold hold to be 41*F or lower. As per the person in charge the tomatoes were diced in the morning and placed in prep cooler prior to lunch. Person in charge replaced old tomatoes with new. Observed oven roasted onions at pizza prep cooler at 50-60*F. Cold hold to be 41*F or lower. As per the person in charge, onions were prepared prior to lunch, slightly cooled and placed in top portion of pizza prep cooler. Onions were cooked less than three hours prior to inspection. Onions were placed in bottom to cool to 41*F. Person in charge temped and replaced with new oven roasted onions. Corrective Action: Corrected at time of inspection.

Advised staff to monitor temperatures after meal rushes and discard as needed. Second consecutive violation observed. Corrective Action: Corrected at time of inspection.
