As per the staff the noodles were prepared on Oct 26th, and placed in walk in cooler to cool overnight. Noodles were embargoed and discarded at time of inspection. Observed cooked and cooler shrimp (50*F, chopped chicken (45*F) and chopped pork (45*F) at prep cooler across from wok line. Cold hold of food to be 41*F or lower. As per the person in charge, the shrimp had been cooked at 12:30 pm and placed into unit to cool. THe chopped chicken and port had been chopped and placed into the prep cooler at approximately 1:00 pm. All cold food must be help at 41*F or lower. Items were placed in walk in cooler to cool to 41*F. Corrective Action: Corrected at time of inspection.
