Inspector's notes

On cookline steam table, observed refried beans/122F and cheese sauce/127F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The cheese sauce was double panned and the steam table dry beneath the refried beans. The TCS foods improperly hot held were within safe time holding parameters and were reheated to 165°F at time of inspection. Corrections were made to the hot holding units. *Repeat violation. Corrective Action: Corrected at time of inspection.
