No hand soap was present at handwashing sink in back of kitchen near grill and cooking area. Instructed PIC to restock the handwash sink with soap. All handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Observed cookie dough and cheesecake pieces in long cold holding preparation table near front of kitchen holding at 55*F. Cold holding unit was stocked 1 hour prior to inspection. PIC instructed employees to move all TCS ingredients to a functioning cold holding unit. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed long cold holding table near front of the kitchen with an ambient temperature of 54*F per the built-in thermometer. Person in charge (PIC) informed inspector that the cold holding unit was not functioning properly, and a work order was placed for it to be fixed the morning of the inspection. Instructed PIC to leave signage informing workers that no TCS foods are to be stored in the unit until it is repaired. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. ****Re-inspection 3/21/25****
