Observed no soap at the hand washing station in front of the walk-in refrigerator. Discussed with PIC handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC supplied soap to the station at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed in a sushi prep table storing raw tuna and spicy tuna at 50*F in the cold holding drawer of the sushi making station. Per person in charge (PIC) the items were sliced and prepped 10 minutes prior to inspection. Discussed with PIC TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. PIC relocated to adequate cooling refrigeration. Corrective Action: Corrected at time of inspection.

Observed temperature of sushi rice at 79*F at time of inspection. Sushi rice was discarded at time of inspection. Reviewed proper time as control procedures at time of inspection. Reviewed with PIC and chef that once an item is on time as control, it must be discarded after the 4 hours. Corrective Action: Corrected at time of inspection.
