Inspector's notes

Observed raw beef patties(53'F) and raw marinating chicken (55'F) stored in a 2-door standing refrigerator next to the flat top at time of inspection. Labeling on both food items listed the prep time at about 5am on 11/5/2025, more than 4 hours prior to inspection. Ambient internal temperature of the refrigerator taken with a min/max thermometer was measured at 52.7'F (See Violation #33). Discussed proper cold-holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed 2-door standing refrigerator operating at 52.7'F via min/max thermometer at time of inspection. All improperly cold-held TCS foods within the unit were willingly discarded at time of inspection. Discussed the importance of routine checks for all temperature controlled units on site with PIC. Establishment will discontinue use of 2-door standing refrigerator and utilize alternative refrigeration until repairs are made and unit is capable of maintaining all TCS foods at or below 41'F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
