Inspector's notes

Observed several dishes stored as clean at the clean dishes rack that still had some thick residues stuck to the pans and pan lips. Also observed some dishes stored as clean with old date labels and glue/residue from old stickers on the pans. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a wide, uncovered bin of cooked and cooling fried chicken pieces placed up high inside of the walk-in cooler. It was observed that the chicken was approximately 6-7 inches in depth in the container. Discussed with person in charge to use a second container and split the portion of chicken into 2 containers so that the layer of cooling chicken is no more than 4 inches in depth. The person in charge acquired another container and split the chicken into two bins so they could finish cooling in the walk-in cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
