Observed container of three cheese blend in the drawer under the grill at 55*F using probe thermometer, verified by person in charge (PIC). PIC stated the cheese was placed in the unit less than four hours prior to inspection and relocated to the walk-in to rapid cool. Corrective Action: Corrected at time of inspection.

Observed chicken breast cooked on the grill and placed into the tray, with an internal temperature of 155-158F, probe thermometer, verified by person in charge (PIC). The cooking temperature was taken immediately after the chicken breast was placed into the tray. Person in charge had employee place the chicken back on the grill until it reached an internal temperature of at least 165*F. Discussed the importance of proper cooking. Corrective Action: Corrected at time of inspection.
