Observed the bottom of the make-line unit at 52.5*F using min/max thermometer being used to cold hold shredded cabbage and salsa. The food items were placed in the unit approximately two hours prior to the inspection from the walk-in and were both at 41*F or below. Person in charge relocated to the walk-in, placed an out of order sign on the unit, and put in a work order. Person in charge will not use until it is able to maintain 41*F or below. Corrective Action: Correct prior to re-inspection.
