Inspector's notes

Observed raw chicken fillets ranging from 46*F to 50*F in the raw chicken station. Per the person in charge the chicken was placed in the unit from the walk-in at 7:00 am, time of inspection was approximately 2:00 pm. Corrected at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection - see embargo.

With same contaminated gloved hand employee proceeded in touching buns and toppings directly with contaminated left gloved hand. Notified Person In Charge (PIC). PIC directed employee to discard contaminated buns and to take off contaminated gloves and wash hands appropriately. ===== Employee not washing hands often enough during food preparation to prevent cross contamination. Employee not washing hands between working with raw food and RTE food.
