Inspector's notes

Observed three small covered metal containers of chopped cooked pork (68-74°F) sitting in the walk in. Alerted manager who stated they put the pork int the walk in to cool a little under 2 hours prior. The containers were immediately uncovered to aid in rapid cooling. Cooling foods to remain uncovered until they reach 41°F. Time Temperature Control for Safety (TCS) foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Provided cooling methods and cooling log via email. Corrective Action: Corrected at time of inspection.
