Observed nacho cheese with temperatures between 109 to 115*F in a steam well at time of inspection. Per person in charge (PIC), all items were placed in the steam well less than an hour prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. OC Inspection - AdvisoryNo County legal action will result from this inspection.Correct the following items prior to the reinspection and final approval.1) Relocate the hand sink in the backroom so that it is centrally located (move to the left side of the 3-compartment sink) and closer to the prep sink area. 2) Provide a 50-gallon water heater. May install a 50-gallon low boy. Current 36-gallon water heater is undersized. 3) Provide a hub drain for the prep sink. Provide a 1-inch air gap in between the hub drain and the prep sink drain line. Remove the soap and paper towels from this area.4) Finish installing the ansul systems for the hood. Provide the final approval from the city of Mesa.5) Paint the ceiling tiles and soffit in the front prep/service area light in color. Use semi or high gloss paint. Also, paint both ceilings in the restroom a light color. Use semi or high gloss paint.6) Provide washable vinyl ceiling tiles above the beverage station. Increase or add additional lighting in this area.7) Test and certify the RPZ backflow device for the soda system. Provide the test report. 8) Provide an ASSE 1022 dual check valve backflow device upstream of the iced tea brewer.9) Provide a separate water line for the chemical dispensers at the mop sink. 10) Provide a 3/8" cove base to the wall and floor juncture of both restrooms, behind the ware wash area, and front area near the subway tile. May tool in a siliconized grout. 11) Provide a U-shaped toilet seat for both restrooms. 12) Provide a brighter light bulb or additional lighting in the walk-in cooler.13) Repair/replace the base of the faucet. at the 3-compartment. 14) Ensure all drain lines have a 1-inch air gap above the floor sink.
