Observed sliced tomatoes at 50°F in back prep table and sliced tomatoes and roast beef slices at 48°F in front prep table. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per person in charge, back tomatoes had been in the prep table since previous day. Front prep table tomatoes and roast beef had been placed there within the hour. PIC disposed of sliced tomatoes from back prep table at time of inspection. Corrective Action: Corrected at time of inspection.
