Inspector's notes

Observed slicer with a build up of sliced meat debris, after discussing slicer cleaning schedule with owner it was determined that slicer is dissembled and cleaned once every few days and spot cleaned once a day without disassembly. Discussed cleaning food contact surfaces contacting TCS needing to be cleaned every 4 hours. Slicer has too many cracks and crevices to be cleaned without disassembly. Corrective Action: Corrected at time of inspection.

Observed pizza line cooler holding shredded cheese, pepperoni, raw sausage, prosciutto, mortadella, capicola, mozzarella, and artichoke hearts 51*f degrees. Per owner items had been on line less than 4 hours and moved to walk-in fridge to cool. Corrective Action: Corrected at time of inspection.

Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
