Employee assisting customers at register then immediately making drinks and scooping ice without a proper handwash. Instructed employee on proper handwashing. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are to be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Inspector's notes

In bottom portion of large prep table cooler, scrambled eggs/80*F and tuna/55*F prepared and cooling in covered containers about 6 inches deep. Per person in charge, tuna and eggs were prepared within normal time parameters. Employee uncovered containers of tuna and eggs and moved to freezer to continue the cooling process. Discussed proper cooling methods with employee. TCS foods are to be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
