Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After discussion with the person in charge it was determined all TCS foods were removed from cold holding about an hour ago. Instructed person in charge to return all TCS foods to cold holding. Discussed utilizing 4 hour Time as a public health control for TCS foods held at room temperature. Provided guidance document. Corrective Action: Corrected at time of inspection.

Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Updated menu with asterisks for all raw or undercooked animal foods at time of inspection with the person in charge. Reminder statement present on menu.
