Inspector's notes

Observed cooked, whole steak in hot holding unit across from the oven (internal temp 110*F). Per Person in Charge, they received the steak pre-cooked and it was reheated approximately one hour prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. TCS foods need to be hot held at 135*F and above. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed dishwasher place multiple pairs of tongs in quat sanitizer at the three compartment sink for approximately 10 seconds and set them aside to dry. Upon review of the manufacturer instructions food contact surfaces shall be soaked in sanitizer for 2 minutes or according to jurisdiction specifications. Instructed staff to soak food contact surfaces in sanitizer for at least 30 seconds. Tongs were re-sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

After discussion with the person in charge it was determined the steak had been hot holding for less than 2 hours.
