No remodel application submitted between now and last routine inspection on 05/12/2025 where new prep sink installation was observed. Service (mop) sinks cannot receive the discharge of an indirect waste pipe. E.g. A food preparation sink drain line discharging into a mop sink. Instructed the person in charge to submit remodel application immediately. Emailed PIC onsite and field leader.

Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home. In the rear prep area near the mop sink observed a newly installed food prep sink. According to the person in charge the prep sink was installed last month. The food prep sink was previously located in the preparation area where the grills are located and discharged to a floor drain. Observed food prep sink installed so it discharging into the mop sink. Service (mop) sinks cannot receive the discharge of an indirect waste pipe. E.g. A food preparation sink drain line discharging into a mop sink. Instructed the person in charge to submit remodel application within 5 business days.

Items must be allowed to drain and to air-dry before being stacked or stored. Stacking wet items such as pans prevents them from drying and may allow an environment where microorganisms can begin to grow.
