Observed at the cookline reach in cooler, portioned pasta pans overfilled. temperatures indication 63-64. informed kitchen chef. strategies for proper cold holding reviewed such as keeping smaller metals pans of past in the front service area. recommended to keep excess food in the walk-in cooler to ensure 41 deg f maintained. also, in the cooler across from the pizza oven, pans of cooked ground pork and sliced Italian bacon at 52-53 deg f . showed pic. manager removed. please ensure tcs food is kept at 41 deg f Corrective Action: Corrected at time of inspection.

Observed at time of inspection an employee touching two meatballs that were just recently cooked with their barehand. Per employee, he did not realize he did that while we were talking about proper cooling temperatures. PIC discarded the two meatballs at time of inspection. Observed another handwashing station next to the soda machine with a sanitizer bucket inside the basin. PIC removed sanitizer bucket at time of inspection. Observed inside the walk in Bolognese sauce in deep containers with an internal temperature of 45-56 *F. Observed various cooked pastas underneath the stove top and prepping table with an internal temperature of 45-58*F. Observed underneath pizza station fresh mozzarella, vegan cheese, peperoni salami and marinara sauce with an internal temperature of 44-51*F. Per PIC, most items were either from yesterday or today and probably a new employee covered them too soon the night before. At the bar observed heavy cream container with an internal temperature of 46-52*F. PIC discarded all food items at time of inspection. Corrective Action: Corrected at time of inspection.

Corrective Action: Corrected at time of inspection.
