Observed a stack of papers stored in the basin of the only handwashing sink in the back kitchen. Upon questioning, employees stated that they used the prep sink to wash their hands. Instructed employees to only use handwashing sinks for hand washing. Papers were removed from the handwashing sink.

Upon review of the time control logs, they had not been used since 6/27. Per time control procedures discussed with the manager, logs must be filled out every time a product is placed on time as control with the start and end times of the time control period. Time stamps were added to the foods. Discussed maintaining logs. Corrective Action: Corrected at time of inspection.
