Facility selling tamales with no paperwork showing approved source. As per person in charge they are obtained from a local restaurant. Instructed person in charge to remove from sale as they are now embargoed for unapproved source. Reviewed approved source information.

No probe thermometer available for taking hot and cold internal food temperature. Instructed person in charge to obtain and email me invoice/picture showing as such within 10 days.

Observed steak burritos hot holding without proper labels. Construction was still taking place to set up equipment in the back of the establishment used to make food for the Eating and Drinking permit. The owner registered for the cottage food license to make packaged foods at home and bring them in until all the equipment is set up to cook on-site. Discussed with the manager that ice packaged in the establishment for sale shall be labeled with the following information: 1) Name of Product; 2) Processor Name; 3) Processor Address or Phone Number; 4) Ingredients; 5) Approximate weight; 6) In English. Per Manager, they will work on a solution.
