Observed sliced olives and pineapple in pizza prep cooler at 44-45*F. Cold hold of food to be 41*F or lower. As per the person in charge the items were placed in unit the day before. Person in charge discarded items. Advised staff to chill to 41*F prior to placing in top portion on prep cooler - deeper containers and lids may help. Corrective Action: Corrected at time of inspection.

Observed sliced deli meats in prep cooler in zip lock bags with no made on or discard dates. As per the person in charge, the items were sliced and portioned the previous Friday. Items were planned to be disposed next day. Observed open deli meats in walk in cooler with no discard or use by date. Person in charge explained that meats were opened the day before. Dates were added to products.
