-- Chlorine concentration in low temperature sanitizing dishwasher at 0ppm on rack inside dishwasher. The chlorine sanitizer container was out of solution. At the time of inspection, the person in charge stated they are out of chlorine sanitizer for the dish machine and will need to order more. The establishment will use 3-compartment sink and will manually wash, rinse, and sanitize (regular chlorine sanitizer) dishes until dish machine chlorine solution arrives. Employee handling dirty dishes then moved on to handle clean dishes out of the dish machine. Employee began wiping the dishes down with a dry towel. PIC had the employee move the manually dried and touched dishes to the dirty side to be rewashed. Employee washed their hands before continuing to handle clean dishes. Also discussed air drying requirement.
