Reviewed with PIC proper sanitization levels for quat. Reviewed that back door shall be shut to prevent pest entry unless receiving deliveries. Provided chemical dispenser/y-valve handout via email.Predefined Comment: No County legal action will result from this inspection.Observed prepackaged ranch being stored in fridge without labeling information. PIC stated ranch is made with milk, mayo, ranch seasoning and is packaged at other Ace of Wingz location. Discussed with person in charge about requirements of ranch packet machine. Machine is required to have NSF certificate, please provide certificate to continue use. If a ranch packaging machine were to be approved these steps likely will be needed (but may not be limited to): 1. An on-site assessment by plan review- assessing placement, wear and tear, potential for contamination,cleanability, and possible modifications to machine. 2. The creation of a cleaning and sanitizing policy for the machine. 3. Labelingfor the salsa packages would have to meet current labeling and CFR Code requirements -including name of establishment, address/phone number, ingredients, possibly date marking, etc. 4. The Department may require that the salsa being packaged be lab tested for pH to help determine if product is TCS or non-TCS. 5. The Department may ask that a variance be applied for if the shelf life is extended beyond 7 days or owner wishes to keep product out of refrigeration.

Observed y-valve attached to AVB at mop sink. Y-valve connected to ecolab chemical dispenser located above mop sink faucet and hose. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. Person in charge (PIC) removed Y-valve from mop sink. Instructed PIC to only attach chemical dispenser when needed. Corrective Action: Corrected at time of inspection.
