Time as a control procedure was reviewed and will be maintained onsite. This establishment does not usea non-continuous cooking process for any menu items. Reviewed the cooking and cooling log for the chicken and fish cooked in the tandoori oven. All foods are fully cooked before being cooled.

No detectable sanitizer in automatic low temperature dishwasher in the kitchen or at the bar that were not in use at the time of inspection. Manager called for service repair and had dishware manually sanitized in the 3 comp sink. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels.
