Observed chicken breast (45*F), Pork Chop (46*F), and fish (46*F) in small prep cooler across from grill. As per the person in charge, the items had been in refrigeration unit overnight. Cold hold of food to be 41*F or lower. Items were embargoed and discarded at time of site visit. Advised staff to check food temperatures throughout the day with a metal stem thermometer to verify food can remain at 41*F. Corrective Action: Corrected at time of inspection.

Inspector's notes

Small sandwich prep cooler across from the grill with an ambient temperature of 44*F using a max/min thermometer. Cold hold equipment must be able to hold food at 41*F or lower. Foods in top portion of cooler were observed to be at 41*F. Advised staff to check foods after meal rushes to verify food remains at 41*F or lower. Ice bath may be used during meal rushes if using time as control. Staff may also choose time as control and discard food after 4 hours of being placed in sandwich prep cooler across from grill. Time as control information provided at time of inspection. Reinspection to be completed on or before Monday June 15th. Corrective Action: Correct prior to re-inspection.
