Observed individually packaged par-cooked chicken wings in a container without a date. Person in charge (PIC) stated that the chicken wings are prepped on Sunday and placed a date on the container at time if inspection. PIC will train employees on date marking. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).

Inspector's notes
Observed fresh garlic in a container with oil-based butter on the counter. Person in charge (PIC) stated that fresh garlic is used. Discussed the risk of using fresh garlic in oil at room temperature. PIC voluntarily discarded the garlic oil at time of inspection and is going to use dried garlic granules in the recipe going forward. Fresh garlic in oil should be stored at 41*F or lower and have 7-day expiration date. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed burgers on the menu without a consumer warning. Person in charge (PIC) stated that customers can order the burgers to taste, (including medium, medium rare, etc.), as the burgers are made fresh from a raw state. PIC also stated that they will no longer offer the burgers to customer preference and only offer burgers fully cooked, instead of including a consumer warning. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Corrective Action: Corrected at time of inspection.
