Cooked diced eggs-49-50F and multiple prepped salads (taco, Caesar, apple pecan, and cobb)-46-52F in the reach in cooler under the make line. PIC stated that all items had been in the unit for an extended amount of time and discarded-see embargo form. Keep TCS foods in cold holding at 41F or below. *Ambient temperature of the reach in cooler under the make line unit was fluctuating between 43-48F. PIC stated that the unit would not be used for TCS food storage until it is maintaining 41F or below. Establishment has sufficient refrigeration. *PIC verified the temperatures of the food items using establishment thermometer. Corrective Action: Corrected at time of inspection.
