Fajita onion mix and diced ham-46-49F in the make line unit between the grill and fryer area. PIC stated that both items had been in the unit for an extended amount of time and discarded-see embargo form. Keep TCS foods in cold holding at 41F or below. *Ambient temperature of the make line unit was 38F. Corrective Action: Corrected at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown which resulted in the violation.

Portioned sausage in the pull-out drawer at 47°F. Per cook, this had just been portioned 1hr previously. The sausage was moved into the walk-in to rapidly cool to 41°F and reached that temperature prior to the end of the inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
