Observed raw beef steaks in reduced oxygen packaging that, per operator, was conducted in the facility using an onsite "Vacmaster". A HACCP plan must be submitted and approved to MCESD prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyazenergovweb. tylerhost.net/apps/selfservice#/home. Additional resources can be found at https://www.maricopa.gov/3978/Food-Variances. Operator was instructed to discontinue vacuum packaging TCS food beyond a 48 hour time until approved by MCESD. Operator began opening the vacuum packages at time of inspection. Corrective Action: Corrected at time of inspection. 2nd Consecutive violation.
