Observed sanitizer buckets that had no quaternary ammonia (Quat) present when tested. Person in Charge (PIC) replaced old Quat sanitizer gallon and refilled sanitizer buckets with Quat at ~200 ppm at time of inspection. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations (150-400 ppm for Quat). Corrective Action: Corrected at time of inspection.
