Provided handout for when to wash, CFPM providers, cooling, cooling methods, and food storage.

Inspector's notes

Observed handwash sink in both bathrooms to have no paper towels and one bathroom to have no hand soap. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provisions and soap for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed goat meat (60-65*F), chicken (115*F), beef (89*F), and pasta sauce (115*F) being hot held. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Person in charge stated all foods were made 2 hours ago, cooled, then put in hot holding unit. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed establishment to have candy/deep frying thermometer ranging temperature of 100*F-400*F available at establishment. Properly calibrated probe thermometers are required at all times for monitoring food temperatures. Explained to PIC what range of temperatures need to be checked with thermomether. PIC had staff member buy digital thermometer at time of inspection. Corrective Action: Corrected at time of inspection.
