Inspector's notes
Observed the following time/temperature controlled for safety food items in 3-door standing refrigerator near cookline with internal temperatures between 44*F-51*F: marinated raw chicken, raw chicken parmesan, cooked pasta, heavy cream, and liquid eggs. Unit had a minimum internal temperature of 44.6*F, via min/max thermometer. Person in charge (PIC) stated items were prepped this morning from refrigerated products and an ice bath was used to cool cooked pasta. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Establishment observed to have adequate refrigeration onsite at time of inspection. PIC stated unit will not be used to hold TCS food products until it is repaired. Observed can opener to have build up on sharp end that punctures can. Observed slicers used to cut tomatoes and bell peppers to have dried food build up. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Chlorine dish machine was in-use at time of inspection. Upon inspection it was reading at 0 ppm chlorine. PIC replaced sanitizer supply bucket and primed machine so that it reached between 50-100 ppm chlorine. All dishes were re-washed. On prep line across from grill there was a container of alfredo sauce holding at 127*F. Item was double panned on steam table and PIC stated it had begun re-heating at 9:00 am, over two hours prior to inspection.
